Lemon Chicken and Spinach Pasta
Tender pieces of chicken in a creamy and indulgent lemon and spinach sauce, served with tagliatelle pasta. Ideal for calorie counting and Weight Watchers!

- 1 Frying pan
- 1 Sauce pan (for pasta)
Ingredients
- Low-calorie cooking spray
- 280 grams Skinless chicken breast cut into strips
- 1 clove Garlic, peeled and chopped
- 250 ml Chicken stock 1 chicken stock cube dessolved into 250ml boiling water
- 2 each Lemons Juiced
- ½ tsp Dried Thyme
- 150 grams Tagliatelle (Dried)
- 30 grams light spreadable cheese
- 160 grams Spinach washed and chopped
- ½ tsp Freshly ground black pepper
- Salt
- 30 grams Parmesan Cheese – grated
- Lemon wedges to serve Optional
Instructions
- Spray a frying pan with low-calorie cooking spray and fry the chicken for 5-10 min on a medium heat, until golden brownLow-calorie cooking spray, 280 grams Skinless chicken breast cut into strips
- Add the garlic and cook for another minute. Stir the stock cube into the boiling water then add to the pan along with the lemon juice and thyme and cook for 3-5 minutes.1 clove Garlic, peeled and chopped, 250 ml Chicken stock, 2 each Lemons Juiced, 1/2 tsp Dried Thyme
- While the chicken is cooking, cook the pasta according to packet instructions and drain. This can be from 9-12 minutes depending on the brand.150 grams Tagliatelle (Dried)
- Add the light spreadable cheese to the stock and mix well.30 grams light spreadable cheese
- Then add the spinach, black pepper, pasta and mix into the sauce. Cook for a further minute.160 grams Spinach washed and chopped, 1/2 tsp Freshly ground black pepper
- Season to taste with salt and black pepper, and sprinkle with parmesan before serving.Salt, 30 grams Parmesan Cheese – grated, Lemon wedges to serve
