Cheesy Chicken Risotto
This super delicious slimming world recipe is perfect for cooking in the motorhome, only 5 ingredients required!
Equipment
- 1 Large frying pan
Ingredients
- 4 each Large Skinless and bone less chicken breasts
- 350 grams Dried risotto rice
- 1.2 litres boiling chicken stock
- 2 each leeks, thinly sliced
- 4 tbsp freshy grated parmassan cheese
Instructions
- Spray a large non-stick frying pan or saute pan with low-calorie cooking spray and place over a high heat. Cut the chicken into bitesized chunks, add to the pan and fry for 5 minutes or until beginning to brown.4 each Large Skinless and bone less chicken breasts
- Reduce the heat to medium-low and add the rice and stock (don't worry if you don't have room for all the stock – you can add it in stages as you stir the risotto. Simmer for 10 minutes, stirring frequently to give a lovely creamy texture.350 grams Dried risotto rice, 1.2 litres boiling chicken stock
- Stir in the leeks and simmer for a further 15-30 minutes or until the rice is just cooked and most of the stock has been absorbed, stirring frequently.2 each leeks, thinly sliced
- Sprinkle over the Parmesan, grind over a little black pepper and serve hot.4 tbsp freshy grated parmassan cheese

To adjust serving for 2 people, simply half the the ingredients
